Been looking into a roll of canvas material and not sure
which GSM is best to go for .

Is there makes that work best or is there makes that immbest to leave alone .

Depends what the customer wants cheap light weight or paying for decent
550 gsm good stuff with rip stop stands a chance of lasting . Grafityp do some good ones but might be reversed wound you print on the smoother

you need a good banner hemming tape and a eyelite machine again grafityp outdoor brass ones best although keep meaning to try plastic ones
Don't skimp on these as goods ones are faster to use and go through 4 layers of 550 easy at the corners

You will need to adjust feed rate for printing but generic2 will be fine for quality
